Mitch Tonks is THE Fish Man!!! Not in smell or appearance, not because he has webbed feet (and I have no way of confirming or denying that statement,) and not because he lives in a Yellow Submarine, under the sea – but simply because he knows and loves everything that has to do with fresh sea food. A long time ago when I worked as a freelance for Restaurant Magazine and Restaurant Magazine was a visual feast filled with good picture stories and portraits, I had the pleasure of traveling down to the Dartmoor coast with Mitch to photograph him, the fishing boats and fisher men, the fish and Mitch’s convertible Saab. It was here that I learned the most important lesson of cooking with fish: Keep it simple. Fresh fish straight from the sea, Iron frying pan, butter, sea salt and high heat. 3 minutes later the fillet tasted like the sea itself.
This time the location and ingredients were slightly less glamorous. A small London studio and smoked fish + fish pate’s from the UK’s leading supermarkets. A taste testing that would put any fine pallet to the test…
