Bill Granger is the founder of the restaurant chain Bills in Australia. A chilled surf style chain that has become known for its tasty scramble eggs and Ricotta Hotcakes. His food is rustic and simple. In the UK his chain has had to go under the name Granger & Co as the name Bill’s was already taken.
Bill is Australian all over. He’s got a chilled mannerism that exudes ‘beach life’. Sun bleached hair and shiny white teeth. Highly successful and now living in the UK, Bill turned up at the shoot apologising for not owning a tie. Impressive! We had the ties ready for this ‘business environment’ scenario as he was doing a taste test of ready made sandwiches, often wolfed down in front of the computer screen in any office. “Mayonnaise!” – Bill said. “Why does every sandwich have to have mayonnaise in it??” I never thought of it but it’s pretty much true. We continued the shoot as planned, Bill in a tie, knee deep in paperwork and business telephone calls. Although there has to be an element of truth to this environment considering that Bill has restaurants all over the world, it still felt a bit like putting a Sloth in a Japanese Train carriage during rush hour.
